Biscuit Topped Chicken PotpieIngredients

Filling

2 teaspoons extra virgin olive oil
1 chopped small onion
1 16-ounce bag thawed, previously frozen mixed vegetables
1/2 cup whole wheat flour
1 teaspoon dried thyme
1 14-ounce can organic chicken broth, reduced-sodium
3/4 cup milk, organic, coconut or almond
3 cups chicken breast from free range chickens, cooked and chopped
1/3 cup flat-leaf parsley, chopped
1/2 teaspoon pepper, freshly ground
1/4 teaspoon salt

Biscuits

2 1/4 cups whole-wheat flour
1 tablespoon baking powder
1 teaspoons Stevia in the Raw or Truvia
1/4 teaspoon salt
4 tablespoons no salt, organic butter – cubed
5 tablespoons extra virgin olive oil
3/4 cup milk, organic, coconut or almond

Directions

Prepare filling:

  1. In a large skillet or frying pan, heat oil over stove burner on medium.
  2. Once oil is heated, add onion. Cook onion, stirring occasionally, for about 3 to 5 minutes or until tender.
  3. Toss in vegetables. Cook and stir for 2 to 3 minutes or until hot.
  4. Top off with sprinkles of flour and thyme. Stir well to coat.
  5. Pour in broth and milk, stirring for 4 to 6 minutes, or until thickened.
  6. Add chicken, parsley, pepper and salt.
  7. Transfer  to a 9-by-13 inch (or 3-quart) baking dish or pan.
  8. Turn on oven to 350 degrees Fahrenheit and allow to preheat.

Prepare biscuits:

  1. In a large bowl, mix whole-wheat flour, baking powder, sugar and salt with a whisk.
  2. Adding butter, rub ingredients together with your fingertips until it begins to look like cornmeal.
  3. Drizzle oil over mix, tossing well until coated.
  4. Sprinkle milk into mix and blend together.
  5. On a lightly floured surface, turn dough out and knead a few times.
  6. Pat or roll the dough into a 10-by-6-inch rectangle. Cut rectangle into 6 biscuits.
  7. Carefully set the biscuits on top of the filling with equal space in between each.
  8. Place in oven and bake the potpie 38 to 40 minutes or until bubbling around the edges and the biscuits are light brown.
  9. Cool off for at least 10 minutes and serve.
