Loaded Mac 'n Cheese with Penne and PancettaIngredients

4 slices pancetta, chopped
1/2 cup chopped onion
1 box penne pasta
3 cups milk
1/2 cup butter
1/3 cup flour
4 cups shredded mozzarella
1 cup cheddar
Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Fry pancetta with onion until onion is translucent and pancetta is slightly crispy.
  3. Cook penne pasta according to package directions. Set aside.
  4. Combine butter, flour and milk in a medium sauce pan. Cook on medium-high to boiling.
  5. Lower heat to medium, continue stirring until mixture becomes thick enough to coat the spoon. Add cheese and continue to stir until melted into the sauce.
  6. Remove cheese sauce from heat and set aside. Add cooked pasta to a large mixing bowl. Pour cheese sauce over top and mix thoroughly. Add the pancetta and onion. Season with salt and pepper, stir once more. Butter a medium sized baking pan. Pour the mac and cheese mixture in.
  7. Bake at 350°F until bubbly, with crispy edges if desired, about 20 to 30 minutes.
