Ingredients
4 slices pancetta, chopped
1/2 cup chopped onion
1 box penne pasta
3 cups milk
1/2 cup butter
1/3 cup flour
4 cups shredded mozzarella
1 cup cheddar
Salt and pepper to taste
Directions
- Preheat oven to 350°F.
- Fry pancetta with onion until onion is translucent and pancetta is slightly crispy.
- Cook penne pasta according to package directions. Set aside.
- Combine butter, flour and milk in a medium sauce pan. Cook on medium-high to boiling.
- Lower heat to medium, continue stirring until mixture becomes thick enough to coat the spoon. Add cheese and continue to stir until melted into the sauce.
- Remove cheese sauce from heat and set aside. Add cooked pasta to a large mixing bowl. Pour cheese sauce over top and mix thoroughly. Add the pancetta and onion. Season with salt and pepper, stir once more. Butter a medium sized baking pan. Pour the mac and cheese mixture in.
- Bake at 350°F until bubbly, with crispy edges if desired, about 20 to 30 minutes.
Serve hot!
