3/4 cup milk
2/3 cup chocolate chips

Directions

  1. Preheat the oven to 350oF.
  2. Cream the butter in a large bowl and gradually mix the sugar and cream until fluffy.
  3. Mix in the melted chocolate, eggs and add the vanilla.
  4. In another bowl, sift the flour, baking powder and baking soda.
  5. Add the flour and milk to the creamed butter.
  6. Mix well until everything is incorporated.
  7. Stir in the chocolate chips.
  8. Generously grease small loaf pans and split the batter equally between them.
  9. Bake for 35 to 45 minutes.
  10. When fully baked, a toothpick inserted into the center should come out clean.
  11. Take out from the oven and let cool first for a few minutes.
  12. Remove the loaves from pan and let it fully cool.

Banana Mini Loaf

Bananas tend to become over ripe quickly, but you can make use of these by baking this recipe for a banana mini loaf.

Ingredients

3/4 cup butter
1 and ½ cup granulated sugar
4 large eggs
1 tsp vanilla extract
3 cups all purpose flour
1 tsp baking powder
1 tsp salt
1 tsp baking soda
5 large bananas, mashed

Directions

  1. Preheat the oven at 3500C
  2. Cream the butter and gradually add the sugar, cream until pale and fluffy.
  3. Add the eggs and blend well then add the vanilla.
  4. Sift the flour, salt, baking soda and baking powder in a separate large bowl.
  5. Add the flour mixture and the bananas to the butter and mix well. Lumps are okay as you don’t want to over mix the batter.
  6. Grease small loaf pans and divide the batter evenly among them.
  7. Bake for 50 to 60 minutes or until a toothpick or knife inserted into the center does not have anything on it when removed.
  8. Remove pans from over and let cook for a few minutes.
  9. Take the loaves out from the pan and let fully cool on a wire rack.
