Stuffed PeppersIngredients

1 lb. ground beef
2 Tbs. olive oil
1 cup onion
2 garlic cloves
1 tsp sage
1 tsp thyme
1/2 cup fresh chopped parsley
4 cups cooked rice
1 cup Parmesan
5 bell peppers
Tomato sauce
1 cup sour cream

Directions

  1. Cook the ground beef, garlic and onion in a large skillet. Add Parmesan, parsley, sage, thyme, salt and pepper. Stir well.
  2. Cut off the top of the bell peppers. Remove seeds and pith.
  3. Mix the tomato sauce with sour cream.
  4. Spoon a shallow layer of tomato sauce into the bottom of a Pyrex dish. Arrange the peppers in the pan just touching each other.
  5. Spoon about 1/2 cup of the meat-rice mixture into each bell pepper.
  6. Top each pepper with the tomato sauce and sour cream mixture.
  7. Bake at 350°F for about 30 minutes.

Serve hot.
