Stuffed Peppers
Ingredients
1 lb. ground beef
2 Tbs. olive oil
1 cup onion
2 garlic cloves
1 tsp sage
1 tsp thyme
1/2 cup fresh chopped parsley
4 cups cooked rice
1 cup Parmesan
5 bell peppers
Tomato sauce
1 cup sour cream
Directions
- Cook the ground beef, garlic and onion in a large skillet. Add Parmesan, parsley, sage, thyme, salt and pepper. Stir well.
- Cut off the top of the bell peppers. Remove seeds and pith.
- Mix the tomato sauce with sour cream.
- Spoon a shallow layer of tomato sauce into the bottom of a Pyrex dish. Arrange the peppers in the pan just touching each other.
- Spoon about 1/2 cup of the meat-rice mixture into each bell pepper.
- Top each pepper with the tomato sauce and sour cream mixture.
- Bake at 350°F for about 30 minutes.
Serve hot.
