Note from Leila – These are a lot better (and healthier) than the green beans my mother (who worked at the Farmer’s Market and always had access to freshly harvested green beans) used to make – God rest her soul! She would bring a bunch (or a bushel) of them home every week, and on Saturdays she would get out the pressure cooker and proceed to cook them to death. However, if there is anything that she is remembered for – it’s her mushy green beans. They did taste good and were somewhat healthy – I guess. Now I usually just steam my green beans to where they still have some crunch to them.

So, if you’re being good and eating your green beans, you may as well make a treat of them every once in a while. These beans sautéed in butter and maple syrup are tender, sweet and delicious.

Ingredients

2 cups green beans
2 tablespoons butter
3 tablespoons maple syrup
Salt and pepper 

Directions

  1. Steam green beans until softened.
  2. Melt the butter in a pan over medium heat.
  3. Add the maple syrup and green beans sauté for a few minutes.
  4. Add salt and pepper to taste and serve.
